This test evaluated the ORAC of the fresh and unprocessed skin/peel of the fruit. It is about 250% higher than the whole jabuticaba fruit, which tells us the most of the antioxidant content is in the skin. The freeze-dried powdered skin extract is by far the highest, which comes as no surprise since it represents the processed skin with the vast majority of its water removed.
