Is frozen cauliflower as good for you as fresh? Many people are under the assumption that frozen vegetables are less healthy than fresh. There's no denying that frozen are less appealing to the palate, but generally, the nutrients are preserved so long as they are frozen promptly after being picked. In the days and weeks it takes for produce to go from the farm to your grocery store, many types of vitamins and antioxidants degrade. Freezing slows this process down dramatically which is why some of the frozen items tested actually score higher than their fresh counterparts. Cauliflower though is one exception to this pattern. The ORAC of frozen (as reflected here) is 29% lower than fresh. A significant difference yet still, much of the antioxidant content is preserved in frozen cauliflower.
