Is dried fruit as good as fresh? No, as many of the nutrients degrade over time as they are exposed to light and air. While its true they still maintain a high amount of the antioxidants, perhaps the worst thing about dried fruit is the sulfur dioxide which is often used during their preparation. Bad side effects from that can include worsening asthma symptoms for asthmatics and the small percentage of the population who has a sulfite allergy. For this reason, look for organic dried peaches that are sulfite-free. Since this sample was purchased in Italy, it's unclear whether or not it was treated with sulfur gas.
