As a special treat, I have found a classic recipe for date bars, however, I am making this just a touch healthier by using coconut sugar instead of granulated, I have also mixed the flour I used. Rather than the full amount of white flour, I incorporated half the amount as wheat flour.

Healthier Date Bars

            Ingredients:

  •                         6 cups dates, finely chopped
  •                         1 cup coconut sugar
  •                         ¾ cup water
  •                         2 sticks butter, unsalted, room temperature
  •                         2 ½ cups oatmeal, quick cooking
  •                         1 cup wheat flour
  •                         1 cup all purpose flour
  •                         1 tsp baking soda
  •                         1 cup brown sugar

Directions:

  1. Preheat the oven to 350*
  2. Butter a 15 x 11 rimmed baking sheet
  3. Combine the coconut sugar, water and dates in a saucepan
  4. Bring to a boil, reduce heat and then simmer for 5 to 7 minutes, until you have a soft paste
  5. Set to the side to allow to cool completely
  6. Combine oatmeal, butter, wheat flour, white flour, brown sugar and baking soda in a large bowl
  7. Mix together with your hands until it forms a crumbly mixture
  8. Press half the crust into the bottom of the sheet pan
  9. Spread the date mixture on top of the crust
  10. Sprinkle the remaining crust crumbs over the top of that filling
  11. Carefully press lightly to heave the crust mix and stick to the filling.

These bars are a healthier version, and they can be made even healthier if you choose to substitute the whole wheat flour for white in its entirety. You could also use coconut sugar for the topping mix.
