Olive oil in itself does not have many antioxidants. One easy way to change that is to add spices and herbs to it, most of which are very rich sources. In this ORAC test, a homemade version of olive oil with garlic was used. It was not specified whether fresh or dried garlic was added but both are excellent sources.
