Comparing how much antioxidants are in dried vs. fresh rosemary is not always easy. Why? Because some ground dry spices include the stem or at least some parts of it. On the other hand when you eat fresh rosemary, you never eat the stems and therefore only the leaf is considered when measuring its ORAC.This test used a sample of fresh leaves which were obtained from Gartner BAMA, one of Norway's largest private distributors of produce. The USDA has not provided testing on this fresh herb but we would predict if they did, the value would be comparable.
