What is rice bran? It's the outer layer of the grain. It is actually a byproduct of the milling process and as is the case with most plants, the outer layers of rice are where most of its nutrients reside, which is why rice bran is so rich in antioxidants. Many add it to baking, cereals, oatmeals, and cooked dishes to fortify them with fiber and antioxidants which include polyphenols and vitamin E.
