The difference between the peppers is the Vitamin C difference and carbs and all that stuff but I can’t find the Vitamin C information for all the peppers.

I also thought that the different colored (smaller) peppers tasted much the same as each other, even eaten raw (but mixed with something else). I think my taste buds are fine so I wonder if the way they are grown makes them taste much the same. I regularly buy frozen cut bell peppers and cook and eat them with other vegetables. Raw or cooked, the flavor is mild so they go well with just about anything. If I buy just one bell pepper, I go for orange for the reason stated. They’re fantastic on a skewer but what you’re tasting is mostly not the pepper.
